Love Your Husband Chicken

Three words: Creamy, Warm, Delicious! I made this casserole up tonight with what I had on hand and it was amazingly delicious. I call it Love Your Husband chicken because he said I must love him a lot to feed him this! Very easy to make, and even easier to eat.

Preheat Oven to  375deg.

Use a medium casserole dish, or 8 X 9 baking dish, spray with pan spray.

Spread 1 C. Uncooked Rice (I used Jasmine, but any white or long grain rice will do) in bottom of baking dish.

Pour 1 C. Water over rice.

Sprinkle 1 C. Frozen peas over rice.

Lay 6 Chicken Thighs (deboned, no skin, opened up flat) across peas and rice.

Sprinkle with a little salt for flavor.

Chop 1/2 large Red Bell Pepper and sprinkle over Chicken Thighs.

In mixing bowl combine:

1 can Cream of Mushroom, celery, or chicken soup,
1 C. finely grated Parmesan Cheese
2 tsp. Garlic powder or salt
1 C. Water

Pour sauce mixture over chicken. Using a spoon, move each chicken piece aside to allow sauce to seep down through the cracks on the sides and in the middle.

Finally, chop two slices of uncooked Bacon and sprinkle on top of casserole. Place, uncovered, in preheated oven and bake for 1 hour until sauce is bubbly and beginning to brown a bit on the sides, and chicken is fully cooked in the middle.

Kung Pao Chicken

This asian dish cooks up quickly, despite the long list of ingredients, and tastes delicious! (This image is taken from Uchinatravel.com. I was going to take a picture of mine, but we ate it all, and an empty plate wouldn't be as attractive.)


Kung Pao Chicken (and/or Lettuce Wraps*)  by Erin Taylor
serves 4

Chicken and veggies:
3 Tbsp canola or peanut oil
1 C. chicken breast, cubed (would also work great with shrimp!)
1 C. chopped celery
1/2 C. chopped red bell pepper
2 green onions, chopped
1/2 C. carrotts, chopped
1/2 C. snow peas or sugar snap peas
1 tsp. chopped garlic

sauce ingredients:
2 Tbsp hoisin sauce
1 Tbsp.  fish sauce
1/4 C. low sodium soy sauce
2 Tbsp. peanut butter
2 Tbsp. poultry gravy mix
1 C. water
1 tsp. red pepper flakes (omit for no heat, add more for more heat)
salt to taste

1 bag cole slaw mix
cooked rice
salted peanuts (for garnish)
Lettuce leaves (for lettuce wraps, only)

In large skillet or wok, heat oil. Add chopped chicken and cook quickly until chicken begins to turn white. Quickly add remaining vegetables and saute until they become slightly tender. (about 3 minutes.) Turn heat down and add remaining sauce ingredients. Stir and let simmer with lid off until chicken is finished cooking.  (add more water for a saucier dish.)

Place small handful of cole slaw mix onto center of plate. Scoop cooked rice over cole slaw mix. Smother with Kung Pao chicken and sauce and garnish with salted peanuts. Serve immediately.

*For Lettuce wraps, complete instructions for chicken and veggies, and sauce. Add 1/4 C. salted peanuts to mixture. Spoon into large lettuce leaves and roll up.

Chicken Cordon Bleu Casserole



Ha! I dreamed this recipe up in my sleep, but in the morning when I went to look for a recipe for regular Chicken Cordon Bleu, I found a gazillion recipes for the casserole! So much for an original idea. But, it's creamy and delicious, so I'm making it.  But mine has peas in it!

Chicken Cordon Bleu Casserole  by Erin Taylor

2 med. chicken breasts, cubed (uncooked)
1 C. cubed ham (I used deli sliced ham and it worked really great.)
1 box. Penne Pasta, prepared accoring to directions (Use whole wheat and get more fiber!)
1  12 oz. package frozen peas
2 C. Breadcrumbs mixed with 3 tbsp. melted butter (for topping)
2 C. Swiss Cheese (one for the sauce)
Swiss White Sauce recipe (below)

Preheat oven to 375 deg.
Spray bottom and sides of a 13 X 9 baking pan and pour in drained noodles. Add cubed chicken, ham, and frozen peas. Pour white sauce over the top and mix throughout. Spread 1 C. shredded swiss cheese over top. (*note: if you like a runnier sauce in your pasta, pour 1/2 C. milk over the mixture at this point and gently mix in. It will make your casserole a bit 'saucier'.) Sprinkle breadcrumb mixture over the top and bake, uncovered for 30 minutes.

Swiss White Sauce

1/2 cup butter
1/4 cup all-purpose flour
3 1/2 cups milk
1C. shredded Swiss Cheese
1 cup grated Parmesan cheese (green bottle from store is fine.)
1/2 teaspoon salt
1-2 tsp. dijon mustard (or yellow mustard for a lighter taste)

 Melt butter in a heavy saucepan over low heat; whisk in flour until smooth. Cook 1 minute, whisking constantly. Gradually stir in milk over medium heat, whisking constantly, until mixture is thickened and bubbly. Stir in Swiss and Parmesan cheeses, salt, and dijon mustard, stiring until cheese is melted and sauce is smooth. Salt to taste.  Pour over pasta and chicken mixture.

Creamy Chicken Gnocchi Soup

Chicken and Gnocchi Soup
Yes. Everybody loves Olive Garden's version of this fabulously creamy and delicious soup. I decided to try a version of it myself. I am not claiming to know their recipe, nor did I even attempt to dissect it. (In fact, I've never actually ordered it myself- I always just sneak some from my hubby's bowl.) But last weekend when it was cold and snowy, and our bodies yearned for warmth and comfort, this recipe was born in my kitchen, and will forever be a favorite.



Creamy Chicken Gnocchi Soup   by Erin Taylor

1 recipe homemade Gnocci (below, or 2 C. purchased gnocchi, prepared according to directions.)

In large pot over medium heat, add:
2 Quarts water
2 Tbsp. concentrated chicken stock, bouillon, or other chicken stock substitute
1/4 C. grated carrots
2 C. chopped spinach
1 C. powdered milk (important for an extra creamy flavor, but regular milk would do.)
2 Tbsp. butter

Let cook until warmed through. Then add:
1 1/2 C. shredded chicken breast
1/4 C. parmesan cheese (the finely grated kind in the plastic bottle works great for this recipe.)
2 tsp. minced garlic cloves, or garlic powder
salt and pepper to taste
2 C. cooked Gnocci

While soup is simmering, mix together:
1 C. water
1/4 C. flour or corn starch

Add to soup and stir until soup begins to thicken. (It will not be the thickness of a chowder, but thicker than it was. )  Cook on med to low heat until spinach is wilted and a little darker in color.

About 6 servings


Homemade Gnocchi

Combine in bowl:
1 C. instant potato flakes
1 C. boiling water

mix until well combined. Add:
2 tsp salt
2 Tbsp parmesan cheese
1 egg

Potatoes will be runnier and gooey. Now, add:
1 1/2 C. flour  (*add one cup, mix with spoon, add 1/4 C more, mix until too stiff to mix. Turn out on floured surface and knead with hands until you've incorporated the rest of the flour.)

Break dough into 2 halves. Roll one half out into a long rope about 1" thick. Slice off 1/2" slices or "pillows". Poke each pillow with your knuckle to make an indentation in each to give it that authentic gnocchi look. Repeat with second half of dough.

Heat large pot with water and let boil. Add the gnocchi in smaller batches (about 15 or so gnocchis at a time) and cook for about 2 minutes. Remove and place aside until ready to use in soup. Can be placed in plastic bag and refridgerated for use at a later time.

Delicious with pasta sauce, or in soups.

Makes about 3 1/2 C. cooked total.

Cheesy Chicken and Potato Casserole

I don't know why, but I have never put chicken with potatoes in a casserole before. Well, I'm not really a casserole kind of girl, really.  However, tonight's crock pot dinner was a total revelation!!! This dish is super easy to prepare, and even more easy to eat! Move over mac and cheese!

Cheesy Chicken and Potato Casserole

1- 30 oz. package shredded or cubed hash brown potatoes, frozen
1 can cream of mushroom soup
1 C. sour cream
1 C. green salsa
1 C. shredded cheddar cheese
1 Tbsp. Chili powder
1 tsp. garlic powder
3 C. cubed chicken

Combine all ingredients in a crock pot. Cook on low for 6 hours. Try to restrain yourself from eating the whole pot!

(this recipe was adapted from THIS recipe on Better Homes and Gardens website. I haven't made it yet, but with smokey cheese it's bound to be good!)

Cashew Chicken

I love chinese food! I haven't an Asian bone in my body, but I sure do love the food. I thought up this dish one night and it's one of my favorites now. I have no idea if it's authentic, but it works for this American girl!

2 C. chopped Celery
1 can bamboo shoots
1 can sliced water chestnuts
2 large Chicken Breasts, cubed
1/4 C. low sodium soy sauce
3 Tbsp. chicken gravy mix (or 1 Tbsp. chicken bullion paste)
2 tbsp. corn starch mixed with 1/2 C. water
1 C. additional water for thinning sauce
1 C. cashews
(optional additions: 1 C. cubed zucchini, canned baby corn, 1 sliced red pepper, chopped green onion, 1 c. broccoli florettes, mushrooms) You can add as much as you like and it only tastes better!
*for spicy chicken add 1 tsp (or more) chili garlic sauce (from asian food section)

Pour a little oil in large skillet or wok. Heat and add celery, bamboo shoots and water chestnuts. Cook for about 3 minutes on med-high. Add soy sauce and chicken flavoring. Add pieces of chicken and lower heat to low. Cover and let simmer just until chicken is white- do not over cook! Add corn starch mixture and let sauce thicken. Add more water to desired consistency. Add cashews and let simmer on low, covered, for about 5 more minutes.

Serve over fried chinese noodles and rice or mix with cooked Ramen noodles.

Santa Fe Chicken

This is so easy it's almost like fast food! But good fast food, that's warm and cheesy and yummy....

*Disclaimer: this recipe calls for salsa. I strongly encourage you to use homemade salsa, an easy recipe for which I have included. However, store-bought will work fine.

Santa Fe Chicken

Salsa:
1 Can chopped tomatoes
1 small can whole green chilies, chopped
1 tsp. chopped garlic
1/2 C. chopped cilantro
1/4 C. finely chopped onion
1 Tbsp. lime juice
salt

combine all ingredients in food processor and pulse until pieces are very small. (This is great with chips, too!)

Chicken:
4 med. chicken breasts, boneless

Lightly powder each side of chicken breast in flour. Heat large skillet with 2 Tbsp. oil. Place chicken in oil and cook uncovered for 5 minutes on medium heat. Turn chicken after 5 minutes and cook another 5 minutes. While cooking:

Slice 2 whole garlic cloves in slices. Place garlic in pan and brown for just a minute before adding salsa. Pour salsa over chicken and garlic pieces. Lift up the chicken so the salsa can get underneath it and stop browning. Cover and cook for 6-7 minutes, or until no longer pink inside. (if you really like garlic, which my family does, I put 5-6 whole garlic cloves in, unsliced! It's really good!)

Cover with a generous amount of cheddar or monterey jack cheese, cover and turn off heat. Let sit a few minutes to let cheese melt.

Serve over rice!

Erin's Tortilla Soup

                                                
I used to eat at this little mexican restaurant in Logan, Utah where they had the BEST tortilla soup. I know, who eats soup at a mexican restaurant, right? Well, this stuff was so good I did! When I moved I craved that soup so much so one night I made one up that comes pretty darn close! Try it- I get RAVE reviews every time I take it to a potluck, and it's about the easiest thing to make!

*This would also be perfect in the crock pot!!!

Erin's Tortilla Soup

1 can each:
chopped tomatoes (not drained)
corn ( not drained)
black beans (drained and rinsed)
small can chopped green chilies (whole is best, just chop them up)
cheddar soup

Pour into a pot and add:
2 T. ground chili powder
2 C. water
3 corn tortillas, cut in half and then into 1/2 inch strips
1 C. cooked and chunked chicken breast (I usually just boil the breast and chop it up)
salt and pepper to taste

Cook the soup on medium heat for about a half hour, stirring frequently so the bottom doesn't scorch. Remove from heat when the soup is nice and thick and the tortillas have absorbed moisture and are nice and soft, practically falling apart as you stir. (if soup is too think you can add more water to desired consistency.)

Using 3-4 more corn tortillas, brush canola oil over both sides of them then cut them in half and then into 1/2 inch strips. Sprinkle lightly with salt and bake in 425 deg. oven until golden brown.

Dish soup into bowls, then add a dollop of sour cream, sprinkle some baked tortilla strips over the top and garnish with sliced avocado and fresh chopped cilantro!

Artichoke Chicken

I've heard nothing but raves about this dish. It's very rich and creamy, and goes great with rice!

For the chicken:
4 chicken breasts, boneless and skinless (can use chicken tenders, instead but double the number)
¼ c. flour for dusting chicken
Salt and pepper
¼ C. Olive Oil for pan

Split chicken breasts to half thickness. (if using tenders, omit splitting) Salt and pepper breasts. Lightly rub both sides with flour. Heat large skillet with olive oil. Place chicken into pan and cook on medium heat WITHOUT TURNING until you can see the bottom sides browning. (about 3 min.) Flip over and do the same on the other side. (breasts should be easy to turn if cooked until crisp on one side) Avoid over cooking chicken, as it will become tough. (cut center of breast to check for doneness. Chicken is done when it is white) Remove chicken from pan and place on serving plate. Cover with towel. Make sauce: (sauce can be made at same time if wanted)

*oven method: dust chicken with flour as above. Spray cookie sheet and place chicken on it. Spray tops of chicken breasts. Bake at 350 oven for 10-15 min. flip chicken over and bake for another 10 min. (lower fat, but harder to control tenderness of chicken)

Sauce:
1 half pint heavy whipping cream
1 pint half and half
1 Tbsp. Chopped Garlic
2 Tbsp. Butter
½ can artichoke hearts, quartered and drained
5 med. Mushrooms, sliced (or sliced zucchini, red pepper, or chopped spinach)
Salt and pepper to taste
3 Tbsp Corn Starch (thinned with water- for thickening sauce)
¼ C. white wine or cooking sherry

In saucepan, add all ingredients EXCEPT cooking wine and corn starch. Let cook on medium heat until mushrooms are tender. Add cornstarch mixture and stir until sauce is thickened. Add cooking wine and continue to cook on LOW heat. (if sauce is too thin, add more cornstarch and water mixture until desired thickness) Pour over chicken, garnish with grated parmesan cheese.

THE Quiche

This recipe really should be called "Pepper Cheese Quiche" because it has delicious roasted red bell peppers and tons and tons of...
